Vegan Burrito Bowls for Easy, Healthy Lunches

Recipe: Vegan Burrito Bowls

Ingredients:

  • 1/4 cup corn
  • 1/4 cup black beans
  • 1/4 cup diced tomatoes
  • 1/2 cup rice
  • 1/4 cup sliced bell peppers (any color)
  • 1/3 cup shredded lettuce
  • 2 Tbsp. salsa verde

Burrito Bowl Instructions

The instructions for making these burrito bowls are pretty simple. Once you have your veggies chopped and rice and beans cooked, all you need to do is throw them in a bowl together. Then, top with the salsa verde and enjoy.

You can eat your burrito bowl immediately or heat it up later in the microwave. I recommend meal prepping them so you have easy lunches to grab for a few days. Lastly, you can keep your vegan burrito bowls sealed in the fridge for up to a week.

Vegan Burrito Bowl Substitutions

You don’t need a meat substitution to make a delicious black bean burrito bowl. However, if you’re looking to add a bit more protein to your bowl, I recommend some meat-free “chicken” strips. My favorite for the vegan burrito bowls are the Gardein Crispy Fingers: they have a zesty flavor that’s perfect for this dish.

Also, burrito bowls are a great way to get rid of the extra veggies you have in your fridge. Don’t be afraid to put your own twist on this recipe by adding leftover veggies, fake meats, or even tofu. You can add whatever you have on hand or even switch up the rice for quinoa or farro. Try topping it with some vegan cheese for a bit of extra flavor.
